You'll have no problem using a plastic bucket as a fermenter for as long as you take proper care of it. Keep in mind that companies will store things like pickles or other food stuffs in pretty much the exact same plastic buckets for way longer periods than the amount of time your batch is sitting in there.
Honestly my most recent thing was modifying a corny keg for pressure fermentation and closed system transfers for hoppy IPAs to minimize O2 exposure. I use Italian glass carboys for long term secondary aging. Food grade buckets with spigots make great fermenters though and I've got 3 of those.

If you're dead set on using a SS fermenter, I would look into fermenting from a keg. Being able to ferment under positive pressure is absolutely crucial for long-term storage and lagering, and most pressure-capable fermenters are outside the reach of homebrewer terrritory ($375 for a Spike Flex+ is about as close as it comes).
Recommendations? I have a Catalyst I like for 5 gallon batches but I am thinking of stepping up to 10 gallon batches and would like to ferment in one vessel. The catalyst's conical-like bottom allows for all in one ferment (no secondary transfer) and huge opening makes it easy to clean.
